Shakshuka Recipe: Eggs Poached in Spiced Tomato and Pepper Sauce

Shakshuka is a classic Middle Eastern and North African one-pan dish of eggs gently poached in a rich, simmering sauce of tomatoes, bell peppers, onions, garlic, cumin and fiery shatta. It is brought straight to the table in the skillet with warm flatbread for scooping.

Frequently Asked Questions

How do you keep the egg yolks runny in shakshuka?
Cover the pan and cook over low heat for just 4 to 5 minutes until the whites turn opaque, then take the pan off the burner immediately as residual heat continues to cook the yolks.
What spices give shakshuka its signature flavour?
Earthy ground cumin and sweet paprika form the base of the sauce, balanced by a spoonful of spicy shatta or harissa.
Can you make the shakshuka sauce ahead of time?
Yes, the tomato and pepper base keeps in the fridge for two days; simply reheat it in the skillet until bubbling before cracking in the eggs.
