Hummus Recipe: Creamy Levantine Hummus with Tahini

Smooth Levantine hummus is made at home by blending very soft chickpeas with tahini, fresh lemon juice, garlic and ice cubes. Whipping the tahini with ice-cold water gives the dip a pale colour and an airy, velvety texture.

Frequently Asked Questions

Why do you add ice cubes when blending hummus?
Ice-cold water emulsifies the sesame oil in the tahini as it spins, whipping air into the mixture and turning it pale and fluffy.
Do you need to peel every chickpea for smooth hummus?
No. Simmering the chickpeas briefly with a pinch of bicarbonate of soda softens the skins so they blend smoothly without hand-peeling.
How long does homemade hummus keep in the fridge?
Stored in an airtight container, it keeps well for 3 to 4 days in the refrigerator; add the olive oil just before serving.
