Kabsa Spice Mix: The Aromatic Blend for Saudi and Gulf Rice Dishes

Kabsa spice mix is a fragrant Arabian Peninsula blend combining green cardamom, coriander, cumin, cinnamon, cloves, turmeric and ground dried black lime (loomi). It gives the braised meat and long-grain basmati rice of traditional kabsa their warm golden-amber hue and signature citrus-spiced aroma.

What Is Inside Kabsa Spice Mix?

Rather than relying on fiery chilli heat, kabsa seasoning builds layers of warm, woody and subtly tangy aromatics. The blend brings together ground coriander seeds, cumin, green cardamom, cinnamon, cloves, black pepper, ginger and nutmeg. Turmeric and sweet paprika tint the broth a rich amber-gold, while ground dried black lime (loomi) lends the distinctive smoky-tart citrus note that defines Saudi and Gulf cooking.

Pairing Ground Kabsa Spice with Whole Aromatics

When cooking authentic chicken or lamb kabsa, ground kabsa spice works hand in hand with whole spices. Cooks first bloom a cinnamon stick, cardamom pods, cloves, bay leaves and pierced whole black limes in hot ghee with diced onions. Once the meat and tomatoes are added to the pot, one to two tablespoons of ground kabsa spice are stirred in so the stock – which later steams the basmati rice – is thoroughly infused.

Uses Beyond Traditional Kabsa

Beyond classic chicken and lamb kabsa, this versatile blend seasons Gulf machboos, spiced rice pilafs with chickpeas and raisins, and marinades for roast chicken, lamb shoulder or oven-roasted potatoes and cauliflower.

Frequently Asked Questions

How does kabsa spice differ from Levantine seven-spice (baharat)?
Kabsa spice includes turmeric, coriander, ginger and dried black lime (loomi) tailored for rice dishes, whereas Levantine seven-spice centres on allspice, cinnamon, cloves and black pepper without turmeric or loomi.
How much kabsa spice should I use per pot?
Use about 1.5 to 2 tablespoons of ground kabsa spice for a pot made with 1 kg of chicken or lamb and 500 g of basmati rice.
Is kabsa spice mix hot and spicy?
No, it is warm and aromatic rather than hot; for heat, cooks simmer a whole green chilli on top of the rice or serve spicy tomato daqoos sauce on the side.
